Cajun cuisine is highly regional. The word itself came from the place these people were first located in Canada, Acadiana. The British were suspect of their loyalties and moved them all around, including southern Louisiana. The Cajun cuisine is very Louisiana as the herbs, spices and vegetables were all found there. Like other cuisines, you might have it in three different places and each one tastes different. Okay, that’s the history lesson. These fine pieces of chicken are marinated well ahead of time to let them invade the meat. They are chargrilled and covered with melted real mozzarella cheese. These are kinda spicy.
